Spicy Thai Pork Rind Salad
This is a low-carb, refreshing Thai fusion appetizer salad

Ingredients
Salad
- 1 Tomato
- 1 Red Onion
- ½ cup Cilantro
- 3 cloves Garlic
- 1 Avocado
- 2 cups Fresh Bean Sprouts
- 1 package Pork Rinds
Dressing
- 2 tsp Sambal Oelek Sauce
- 1 tbsp Brown Sugar
- 1 tsp Fish Sauce
- 1 tbsp Lime Juice
Procedure
- Cube the tomato and chop the red onion, garlic and cilantro. Combine in a mixing bowl. Optionally, add chopped avocado
- In another mixing bowl, combine Sambal Oelek chili sauce, brown sugar, fish sauce and lime juice. Mix until thoroughly combined and chill in the fridge for best results. Adjust the amount of chili sauce to taste.
- Toss the tomato mixture with bean sprouts and pour the dressing on top to coat
- Finally, plate the salad mixture and place fresh pork rinds on top. Serve immediately, as this salad is best chilled
