Biscuits

Equipment

Pre-heat Oven to 425°F

Ingredients

Dry

  • 1 cup AP Flour
  • 2 tsp Baking Powder
  • ¼ tsp Baking Soda
  • ¼ tsp Salt

Wet

  • ⅔ cup Buttermilk
  • 1 tbsp Butter
  • 1 tbsp Shortening

Procedure

  1. Combine the dry ingredients in a mixing bowl.
  2. Chop the (chilled) butter into fine cubes and then add to the dry mix along with the shortening.
  3. Using a spoon or your fingers, pinch the dry mix into the butter and shortening until a meal-like consistency is formed.
  4. Add the buttermilk and mix lightly until a dough forms. Adjust the buttermilk to taste - anywhere from ½ to ¾ cups. Using ⅔ cup brings typical results.
  5. Press the dough into a biscuit cutter on a baking sheet, then lightly dust each biscuit on the top with flour. Smooth out the top of the dusted biscuit.
  6. Repeat until all of the biscuits are formed, dusted and smoothed out.
  7. (Optional): brush a small amount of melted butter on top of each biscuit.
  8. Bake at 425°F for about 10-15 minutes, or until golden brown.
