Buttermilk Pancakes

The inclusion of both baking soda and baking powder attempts to create a suitably alkaline pH environment in the dry ingredients so that when the acidic buttermilk is mixed in, CO2 bubbles are created and the batter is leavened.

Buttermilk Pancakes

Ingredients

Dry

  • 1 cups AP Flour
  • ½ tsp Baking Soda
  • 1 tsp Baking Powder
  • ½ tsp Salt
  • 1 tbsp White Sugar

Wet

  • 1 cup Buttermilk
  • 1 Egg Yolks
  • 1 Egg Whites
  • 2 tbsp Melted Butter

Procedure

  1. Combine Dry Ingredients
  2. Whisk egg yolks into melted butter
  3. Whisk egg whites into buttermilk
  4. Combine all wet and dry ingredients, mix lightly
  5. Cook on a lightly buttered griddle, 350°F
