Buttermilk Pancakes
The inclusion of both baking soda and baking powder attempts to create a suitably alkaline pH environment in the dry ingredients so that when the acidic buttermilk is mixed in, CO2 bubbles are created and the batter is leavened.

Ingredients
Dry
- 1 cups AP Flour
- ½ tsp Baking Soda
- 1 tsp Baking Powder
- ½ tsp Salt
- 1 tbsp White Sugar
Wet
- 1 cup Buttermilk
- 1 Egg Yolks
- 1 Egg Whites
- 2 tbsp Melted Butter
Procedure
- Combine Dry Ingredients
- Whisk egg yolks into melted butter
- Whisk egg whites into buttermilk
- Combine all wet and dry ingredients, mix lightly
- Cook on a lightly buttered griddle, 350°F
