Potato Hash Browns
Basic diner-style hash browns

Ingredients
- 2 Potatoes, Russet or Idaho
- ½ cup Onion, Finely Chopped
- ¼ cup AP Flour
- 1 Egg
Procedure
- Peel and shred potatoes, then rinse under cold water until most starch is removed (water will start to run clear)
- Pat dry with a paper towel, then mix in onion
- Beat the egg, then whisk in flour until thoroughly combined
- Mix in potato and onion, then pour off as much excess egg batter as possible
- Shallow-fry in hot oil, then season with salt and pepper to taste
