Basic diner-style hash browns

Potato Hash Browns

Ingredients

  • 2 Potatoes, Russet or Idaho
  • ½ cup Onion, Finely Chopped
  • ¼ cup AP Flour
  • 1 Egg

Procedure

  1. Peel and shred potatoes, then rinse under cold water until most starch is removed (water will start to run clear)
  2. Pat dry with a paper towel, then mix in onion
  3. Beat the egg, then whisk in flour until thoroughly combined
  4. Mix in potato and onion, then pour off as much excess egg batter as possible
  5. Shallow-fry in hot oil, then season with salt and pepper to taste
