Apple Pie

Baking this classic Apple Pie recipe in mini pie plates makes them easier to manage and serve. Honeycrisp and Cortland apples are great for a sweeter Apple Pie. Golden Delicious and Granny Smith will help make a more tart, classic Apple Pie. Don't be afraid to blend and experiment with different varieties.

Apple Pie

Equipment

Pre-heat Oven to 375°F

Ingredients

Dough

  • 1 ½ cups AP Flour
  • 3 tsp White Sugar
  • ⅛ tsp Salt
  • 8 tbsp Butter, Cubed
  • 2 tbsp Water (Ice Cold)

Filling

  • 4-5 Apples
  • ½ cup White Sugar
  • 1 tbsp Lemon Juice
  • 2½ tbsp Butter
  • ¼ tsp Ground Cinnamon
  • ⅛ tsp Ground Nutmeg

Procedure

Dough

  1. Combine the AP Flour, Salt and Sugar and place in the freezer for at least 30 minutes
  2. Place the chilled dry ingredients and cold, cubed butter in a food processor and pulse until a mealy texture forms
  3. Whisk the egg with 2 tbsp of cold water and gradually add to the food processor while pulsing until thoroughly combined
  4. Take the dough out of the food processor and form into a disc, wrapped in saran wrap. Place the disc in the fridge for at least 30 minutes before finishing the crust

Filling

  1. Wash, Core, Peel and slice the Apples. You can slice them into long wedges, or smaller chunks; either way is fine. Toss the apple pieces in lemon juice and sugar, then set aside
  2. Melt the butter in a saucepan over medium-high heat. Add the apple pieces and stir to coat then cook until they begin to simmer and soften slightly.
  3. Strain the apple pieces and set aside, returning the liquid to the saucepan. Continue to cook the juices over medium-high heat until they start to caramelize and thicken.
  4. Add the spices to this mixture, then combine with the apple pieces

Crust and Baking

  1. Take the disc of dough out of the fridge and lightly dust with flour. Now would be a good point to start preheating the oven.
  2. Roll the dough out flat, slightly thinner than a traditional pie crust would be (about ⅛")
  3. Line the 5-inch Pie Plate with dough and fill with filling
  4. Prepare a top for the pie. Making a woven lattice is easier using 5-inch Pie plates, but a traditional pie top is fine too. You can also brush the pie top with an egg wash and sprinkle with sugar, if desired.
  5. Bake the pie at 375°F until golden brown, about 35-40 minutes.
