Belgian Waffles

Belgian Waffles became widely popular in the United States after their exhibit at the 1964 New York World's Fair. This traditional Belgian Waffle recipe uses yeast to provide leavening.

Belgian Waffles

Ingredients

  • 1½ tsp Instant Dry Yeast
  • 1½ cups Warm Milk
  • 2 Egg Yolks
  • 2 Egg Whites
  • 4 tbsp Melted Butter
  • ¼ cup White Sugar
  • 1½ tsp Salt
  • 1 tsp Vanilla Extract
  • 2 cups AP Flour

Procedure

Note: Warming 1½ Cups of fridge-cold milk in a standard microwave for 60 seconds on High appears to do the trick. Make sure this is done before adding the yeast in the next step.

  1. Dissolve the yeast in the warm milk and allow to bloom
  2. Whisk the yeast mixture, egg yolks, melted butter, sugar, salt and vanilla extract until combined
  3. Add the flour and whisk until combined
  4. Beat the egg whites to medium peaks and fold into the batter
  5. Cover the mixing bowl and let it rise until doubled (about 1 hour)
  6. Cook about ½ Cup of batter at a time on a waffle iron and serve immediately
