Chocolate Pudding

A simple cornstarch based pudding recipe. Vary the amount of cocoa powder to taste. Goes very well served chilled inside eclaire / cream puff pastry. Add an extra tbsp of corn starch and some additional vanilla extract in place of cocoa powder for a Vanilla version of this recipe.

Chocolate Pudding

Ingredients

  • 1½ cups Milk
  • ¼ cup White Sugar
  • 2 tbsp Corn Starch
  • 1 tbsp Butter
  • ¼ cup Cocoa Powder
  • ⅛ tsp Salt
  • ¼ tsp Vanilla Extract

Procedure

  1. Combine cold Milk with all ingredients in a saucepan
  2. Heat the mixture over medium-high, carefully whisking to prevent burning
  3. Once the mixture begins to thicken and bubble, remove from heat and continue to whisk for another 1-2 minutes
  4. Chill and serve
