Chocolate Pudding
A simple cornstarch based pudding recipe. Vary the amount of cocoa powder to taste. Goes very well served chilled inside eclaire / cream puff pastry. Add an extra tbsp of corn starch and some additional vanilla extract in place of cocoa powder for a Vanilla version of this recipe.

Ingredients
- 1½ cups Milk
- ¼ cup White Sugar
- 2 tbsp Corn Starch
- 1 tbsp Butter
- ¼ cup Cocoa Powder
- ⅛ tsp Salt
- ¼ tsp Vanilla Extract
Procedure
- Combine cold Milk with all ingredients in a saucepan
- Heat the mixture over medium-high, carefully whisking to prevent burning
- Once the mixture begins to thicken and bubble, remove from heat and continue to whisk for another 1-2 minutes
- Chill and serve
