Dutch Oven Clafoutis

Clafoutis is a rural French baked custard desert, from a region of France where black cherries are common. When other fruits like tangerine, apples, plums or cranberries are used in the filling, it is called a flaugnarde

Dutch Oven Clafoutis

Equipment

Pre-heat Oven to 400°F

Ingredients

  • 12 oz Black Cherries
  • 2 Eggs
  • ¼ cup Fine White Sugar
  • ½ cup Milk
  • ½ cup AP Flour
  • 1 tbsp Icing Sugar

Procedure

  1. Place cherries around the bottom of a well-buttered dutch oven
  2. Whisk eggs and sugar together until frothy and then add remainder of ingredients to form the batter
  3. Pour batter evenly over the cherries and bake in a campfire or 400°F oven
  4. Remove when golden brown (approximately 25 minutes) and allow to cool. Garnish with icing sugar
