Mango Pudding

This is a gelatin-based pudding you can make from frozen mango chunks if the fresh fruit is not available (thaw first before using). Very popular in Hong Kong, this pudding is often served in dim sum restaurants as a dessert.

Ingredients

  • 1 Cup Mango Chunks
  • ⅓ Cup Milk
  • 1 packet Unflavored Gelatin Powder
  • 1 Cup Hot Water Approx 208°F
  • 3 tbsp White Sugar

Procedure

  1. Thaw the mango chunks if necessary, then thoroughly puree along with the milk in a blender. Strain if a smooth texture is desired.
  2. In another container, mix the white sugar and gelatin powder with the hot water, stirring carefully to combine.
  3. While continuing to stir the gelatin mix, introduce the mango puree until all is consistently combined.
  4. Pour this mixture into your desired gelatin mold(s) and let sit in the fridge for a minimum of 4 hours. Serve chilled.
