Hong Kong Cold Lemon Tea
A very simple pitcher of lemon-flavored Iced Tea that balances sweet and tart.

Ingredients
- 1 Gallon Water Filtered
- 10 bags Black Tea Bags (Or 3 Large Bags)
- 1 Lemon OR ¼ cup Lemon Juice
- 1 cup White Sugar
- ½ tsp Citric Acid
Procedure
- Bring water to a rolling boil in a stock pot. Add the tea bags and brew under boil for about 5-7 minutes.
- Fully zest the lemon, setting the zest aside for later
- Squeeze the juice from the Lemon, plus 1 extra tbsp of Lemon Juice into the same dish that holds the zest
- Once the tea has brewed, remove and discard the tea bags
- Add the zest and lemon juice to the tea and remove from heat. Allow this mixture to sit for about 3-5 hours
- Stir in the White Sugar and Citric Acid, adjusting to taste
- Strain the tea into a pitcher and chill
