Hong Kong Cold Lemon Tea

A very simple pitcher of lemon-flavored Iced Tea that balances sweet and tart.

Hong Kong Cold Lemon Tea

Ingredients

  • 1 Gallon Water Filtered
  • 10 bags Black Tea Bags (Or 3 Large Bags)
  • 1 Lemon OR ¼ cup Lemon Juice
  • 1 cup White Sugar
  • ½ tsp Citric Acid

Procedure

  1. Bring water to a rolling boil in a stock pot. Add the tea bags and brew under boil for about 5-7 minutes.
  2. Fully zest the lemon, setting the zest aside for later
  3. Squeeze the juice from the Lemon, plus 1 extra tbsp of Lemon Juice into the same dish that holds the zest
  4. Once the tea has brewed, remove and discard the tea bags
  5. Add the zest and lemon juice to the tea and remove from heat. Allow this mixture to sit for about 3-5 hours
  6. Stir in the White Sugar and Citric Acid, adjusting to taste
  7. Strain the tea into a pitcher and chill
