Sushi Rice

This vinegar-rich sushi rice recipe will make about 6 standard maki rolls of sushi.

Sushi Rice

Ingredients

Rice

  • 440 grams Short Grain Rice
  • 390 grams Water

Syrup

  • ⅔ cup Rice Vinegar
  • ¼ cup White Sugar
  • 2 tsp Salt

Procedure

  1. Wash the rice, then cook in a rice cooker.
  2. Combine the syrup ingredients and microwave for about 30 seconds. Stir to dissolve the Salt and Sugar, then return to microwave for a further 30-60 seconds.
  3. Remove the cooked rice and transfer to a large metal bowl, spreading it out to allow it to cool.
  4. Slowly pour over the syrup, gently mixing with a rice paddle.
  5. Cover with cling film, then chill for about 2-3 hours.
