Sushi Rice
This vinegar-rich sushi rice recipe will make about 6 standard maki rolls of sushi.

Ingredients
Rice
- 440 grams Short Grain Rice
- 390 grams Water
Syrup
- ⅔ cup Rice Vinegar
- ¼ cup White Sugar
- 2 tsp Salt
Procedure
- Wash the rice, then cook in a rice cooker.
- Combine the syrup ingredients and microwave for about 30 seconds. Stir to dissolve the Salt and Sugar, then return to microwave for a further 30-60 seconds.
- Remove the cooked rice and transfer to a large metal bowl, spreading it out to allow it to cool.
- Slowly pour over the syrup, gently mixing with a rice paddle.
- Cover with cling film, then chill for about 2-3 hours.
