Caesar Salad Dressing
This caesar dressing is easy to mix together with an immersion blender, and can have quite a kick if you use fresh garlic.

Ingredients
- 1 Egg Yolk
- 1 tbsp Lemon Juice
- 1-2 Cloves Garlic, Minced
- 1 tbsp Dijon Mustard
- 2 tsp Worcestershire Sauce
- ⅓ Cup Olive Oil
- ¼ Cup Parmesean Cheese
- 1 tsp Black Pepper
- 2 tsp Colatura, Optional
Procedure
- Mix all ingredients in a suitable container and blend thoroughly with an immersion blender.
- Salt to taste, noting that Colatura will add plenty of natural saltiness.
- Serve over romaine lettuce, with croutons.
