Hot Pepper Relish (Chow Chow)
This is an easy to make crunchy hot pepper relish that goes great with hot dogs. Made with fresh peppers, it can last a long time in the fridge.

Ingredients
- 2 Onions, Chopped
- 3 Hungarian Wax Peppers, Chopped
- 2 tbsp Brown Sugar
- 1 tbsp Celery Seed
- 1 tbsp Ground Mustard
- 2 tsp Turmeric
- 1 tsp Black Pepper
- 1 tsp Salt
- 1 tsp Cayenne Pepper, Optional
- Vinegar, to cover
Procedure
- Chop the Onions and Peppers, then combine with other seasonings in a lidded container.
- Cover the mixture with a mild vinegar (e.g. Rice Wine Vinegar) and refrigerate.
- Chill the relish in the fridge for at least a week.
