Jerk Chicken
This recipe is really just smoker instructions, as it uses a premade jerk spice rub.

Equipment
Pre-heat Smoker to 180°F
Ingredients
Marinade
- 4 Chicken Thighs, Bone-in, Skin-on
- 3 tbsp Jerk Spice Rub
- ¼ Onion, Sliced
- 2 tbsp Soy Sauce
Glaze
- 2 tbsp Honey
- 1 tbsp Chili Paste (Sambal Oelek)
- 1 tbsp Jerk Spice Rub
Procedure
Preparation
- Combine the ingredients for the Marinade and spread over the chicken thighs.
- Seal the chicken thighs and marinade in a vacuum bag and allow to sit overnight, refrigerated.
Smoking
- Smoke the marinated chicken thighs skin-up at 180°F for 3-4 hours at a high-smoke setting.
- Mix together the ingredients for the glaze, then apply to both sides of the chicken thighs.
- Increase the temperature of the smoker to 350°F and cook the chicken thighs skin-down for approximately 45 minutes.
