Jerk Chicken

This recipe is really just smoker instructions, as it uses a premade jerk spice rub.

Jerk Chicken

Equipment

Pre-heat Smoker to 180°F

Ingredients

Marinade

  • 4 Chicken Thighs, Bone-in, Skin-on
  • 3 tbsp Jerk Spice Rub
  • ¼ Onion, Sliced
  • 2 tbsp Soy Sauce

Glaze

  • 2 tbsp Honey
  • 1 tbsp Chili Paste (Sambal Oelek)
  • 1 tbsp Jerk Spice Rub

Procedure

Preparation

  1. Combine the ingredients for the Marinade and spread over the chicken thighs.
  2. Seal the chicken thighs and marinade in a vacuum bag and allow to sit overnight, refrigerated.

Smoking

  1. Smoke the marinated chicken thighs skin-up at 180°F for 3-4 hours at a high-smoke setting.
  2. Mix together the ingredients for the glaze, then apply to both sides of the chicken thighs.
  3. Increase the temperature of the smoker to 350°F and cook the chicken thighs skin-down for approximately 45 minutes.
